Ingredients
- 1 box yellow cake mix (15.25 oz)
- 2 tablespoons cocoa powder
- 2 teaspoons instant coffee or espresso powder
- 2 eggs
- 1/3 cup vegetable oil
- 1/2 teaspoon vanilla
- 1/4 cup chocolate chips
- 1/2 cup mini marshmallow
Instructions
1. Preheat oven to 350°F.
2. In a bowl mix the cake mix, cocoa powder, and instant coffee.
3. Add eggs and oil and mix until a thick dough forms.
4. Scoop large dough balls (2–3 tablespoons each).
5. Place on a lined baking sheet and do not flatten.
6. Bake 9–11 minutes until the edges set but the center still looks slightly underdone.
7. Let them cool on the pan for 5 minutes so they finish setting.
